10-MINUTE WHITE BEAN CHICKEN SOUP (GF & DF)
1 rotisserie chicken, shredded
1 sweet onion, diced (or a half bag of frozen diced onions)
4 tsp minced garlic
2 cans Great Northern Beans
1 3.5 oz can green chilies
1/2 teaspoon dried oregano leaves
1/4 teaspoon coriander
1/2 teaspoon salt
1/2 cup chopped cilantro
Handful of chopped spinach
32 ounces chicken broth
Sauté the onions & spinach in a large soup pot on medium heat (grease the pan first).
Throw the rest of the ingredients in and cook on medium/low heat until soup is warm.
Serve & enjoy!
