10-MINUTE WHITE BEAN CHICKEN SOUP (GF & DF)

  • 1 rotisserie chicken, shredded

  • 1 sweet onion, diced (or a half bag of frozen diced onions)

  • 4 tsp minced garlic

  • 2 cans Great Northern Beans

  • 1 3.5 oz can green chilies

  • 1/2 teaspoon dried oregano leaves

  • 1/4 teaspoon coriander

  • 1/2 teaspoon salt

  • 1/2 cup chopped cilantro

  • Handful of chopped spinach

  • 32 ounces chicken broth


  1. Sauté the onions & spinach in a large soup pot on medium heat (grease the pan first).

  2. Throw the rest of the ingredients in and cook on medium/low heat until soup is warm.

  3. Serve & enjoy!
