Chickpea Salad Sandwich
1/2 can chickpeas, drained & mashed with fork
2 t. Dijon mustard
2 T. Organic roasted garlic tahini
Lemon juice, from 1 lemon
Drizzle of olive oil
Diced celery
Diced red onion
Salt, pepper, & garlic powder to taste
With a fork, mash & mix all the ingredients together. Serve in gluten-free sprouted bread with lettuce & sprouts!
