Chocolate Chip Pumpkin Pancakes


  • 1 cup almond milk, coconut milk, or water

  • 1/2 cup 100% canned pumpkin

  • 2 eggs

  • 2 tablespoons honey

  • 2 tablespoons avocado oil

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon pumpkin pie spice

  • 1 cup whole wheat flour, gluten-free flour, or cassava flour

  • Chocolate chips (I use Hu)


Mix all the ingredients together! Spoon batter onto a greased skillet using a 1/4 cup measuring cup. Sprinkle chocolate chips on pancakes before flipping the pancakes. Flip pancakes when they start to bubble! Serve with desired toppings.
