Chocolate Chip Pumpkin Pancakes
1 cup almond milk, coconut milk, or water
1/2 cup 100% canned pumpkin
2 eggs
2 tablespoons honey
2 tablespoons avocado oil
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1 cup whole wheat flour, gluten-free flour, or cassava flour
Chocolate chips (I use Hu)
Mix all the ingredients together! Spoon batter onto a greased skillet using a 1/4 cup measuring cup. Sprinkle chocolate chips on pancakes before flipping the pancakes. Flip pancakes when they start to bubble! Serve with desired toppings.
