Chocolate Coconut Almond Fudge

1/2 c. raw coconut oil
2/3 c. raw almond butter
2/3 c. 100% pure maple syrup
1 T. vanilla extract
A dash of sea salt or Himalayan salt
1/2 t. almond extract
1/2 cup unsweetened shredded coconut
1 bag of enjoy life chocolate chips
Add coconut oil, almond butter, & maple syrup to a saucepan on medium heat, & stir. Once it starts bubbling, leave it on this soft boil for 1 min stirring every 15 seconds.
Turn the stovetop off, and add the vanilla extract, a dash of sea salt, shredded coconut & almond extract.
Pour in an 8x8 glass pan and put it in the freezer for 1-2 hours or until caramel is hard.
When caramel is hard, melt chocolate chips & pour on top of the caramel. Set pan back in the freezer.
Once chocolate is hardened, take out of the freezer, sprinkle course sea salt or Himalayan salt on top, & enjoy! Store in the freezer for a quick chocolate fix! 🙂
