Cleaner Cornbread (GF)

These go perfect with my chili recipe!


Ingredients

3 Tbsp Grass-fed salted organic butter or ghee, melted (can sub for more oil if needed)

1/3 cup olive oil, avocado, or coconut oil, melted

2 eggs

1 1/4 cup almond milk

1/2 tsp Himalayan salt

1 Tbsp baking powder

1/2 cup cornmeal

2/3 cup raw honey

1 1/2 cup all-purpose gluten free flour (or 100g of fine almond flour, 60g of arrowroot, & 20g of coconut flour)


Directions

Set the oven to 350°F. In a medium mixing bowl add butter, oil, eggs, milk, salt, baking powder, & honey. Mix with a handheld electric mixer. Add cornmeal, flour, & mix until combined.

Spray muffin tins with an oil non-stick spray, and fill each insert 3/4 of the way full using a 1/4 cup measuring cup to scoop. Bake for 16-20 minutes or until toothpick comes out clean. Serve warm with butter!
