Fresh Spring Rolls with Peanut Dipping Sauce

Spring Roll Ingredients:

  • 1 box of brown rice noodles, cooked

  • 2-3 carrots, peeled & thinly sliced

  • 1 red cabbage, shredded

  • 1 lettuce, shredded

  • Chicken, cooked & shredded (optional)

  • Pack or rice paper


Peanut Sauce Ingredients:

  • 3 T. unsalted peanut butter

  • 3 T. soy sauce

  • 1 T. freshly squeezed lime juice

  • 1 T. rice wine vinegar

  • 2 t. fresh ginger, minced

  • 1/4 t. Sriracha

  • Some water for thinning


Directions:

  1. Add all the ingredients for the peanut sauce in a blender & blend. Set aside.

  2. Time to assemble the spring rolls! Grab a pie pan and fill it with warm/hot water.

  3. Set one wrapper in the hot water soaking it for about 30 seconds until it becomes soft and easy to work with. Carefully set it on a damp towel. Place about a tablespoon of noodles, carrots, cabbage, lettuce, chicken (if using), onto the soft rice paper. Fold, tuck, & roll it up nice and tight like a burrito! Repeat until all the spring rolls are assembled.

  4. To eat, dip the spring rolls in the peanut sauce and enjoy!
