Chocolate Chip Pumpkin Bread (Crock-Pot or Oven)

Ingredients

  • 1 cup + 2 tablespoons of maple syrup

  • 2 eggs

  • 1 (15 oz) can of 100% pure pumpkin

  • 1/4 cup unsweetened applesauce

  • 1/4 cup water

  • 3/4 teaspoon salt

  • 3 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoons ground cinnamon

  • 1/2 teaspoon pumpkin pie spice

  • 1 3/4 cups + 2 tablespoons gluten free oat flour (I grind oats in my blender)

  • Chocolate chips in the batter and/or sprinkled on top (I use Hu)⠀

Oven Directions

  1. Set the oven to 325 degrees Fahrenheit.

  2. Coat a bread pan with non-stick cooking spray and set aside.

  3. Mix all the ingredients together in a medium bowl (add flour last) until completely combined.

  4. Spoon the batter in the bread pan.

  5. Sprinkle chocolate chips on top, or stir them in the the batter before you put in the pan. If you sprinkle the chocolate chips on top, they will have a little crunch since they are on top.

  6. Bake for 60 minutes or until toothpick comes out clean (every oven is different.)

Crock-Pot Directions⠀⠀

  1. Coat a bread pan with non-stick cooking spray and set it aside.

  2. With a handheld mixer, mix all the ingredients together except for the flour & chocolate chips.

  3. Mix in the flour, then stir in the chocolate chips.

  4. Spoon the batter in the bread pan.

  5. Add 2 cups of water to the crock-pot & set the bread pan inside the crock-pot (it’s okay if the bread pan doesn’t touch the bottom of the crockpot). *See notes if your bread pan doesn’t fit inside your crock-pot.

  6. Lay a kitchen towel over the crock-pot then set the lid on top (this is to soak in extra moisture).

  7. Turn crock-pot on high and let it bake for 2 hours 15 min to 3 hours or until toothpick comes out mostly clean in the middle (every crock-pot is different)!

  8. When finished, carefully pull the bread pan out, let cool, slice, & serve with butter!

Notes:

-1 1/4 cup oats blends around 1 cup oat flour. -Make sure your oats are labeled gluten free, if you are on a gluten free diet.

-If your bread pan doesn’t fit the crock-pot, you can skip using a bread pan & skip adding water to the crockpot. Instead, lay down parchment paper directly in the crock-pot & spoon the batter evenly on the parchment paper for an oval loaf!
