Gooey Chocolate Zucchini Muffins (GF, DF, & Refined Sugar Free)


Ingredients


  • 1 3/4 c. gluten-free oats

  • 3 1/2 t. baking powder

  • 1/4 c. unsweetened Cocoa powder

  • 1/2 t. Himalayan salt

  • 1 t. pure vanilla extract

  • 1 t. cinnamon

  • 1/2 c. raw honey

  • 1/2 c. coconut sugar

  • 1 c. applesauce

  • 1/4 c. almond milk

  • 1 c. zucchini, (about 1 zucchini, shredded)

  • 1/2 bag chocolate chips (dairy-free, gluten-free & sugar-free options are found online)


Directions


  1. Set the oven to 350°F

  2. Blend all the ingredients together in a blender except for the zucchini & chocolate chips.

  3. Shred the zucchini with a cheese grater (you don’t have to peel it first).

  4. Add the shredded zucchini & chocolate chips to the batter, but instead of blending it again stir them in with a spatula.

  5. Scoop the batter into a greased or lined muffin pan with a 1/4 cup measuring cup; filling each one almost full to the top. Makes around 12-15 muffins.

  6. Bake for 21 minutes or until toothpick comes out clean.
