High Protein Lemon “Cheesy” Chicken Cauliflower Bowls (DF & GF)



This makes such an easy dump dinner & it’s so fresh & “zesty” from the lemon juice!


Ingredients:

  • 1 lb ground chicken

  • 1 cauliflower head

  • 1 zucchini, thinly sliced

  • 1 sweet onion, diced

  • 1/2 T. Garlic salt

  • 1/2 t. Himalayan salt

  • Juice from 2 lemons

  • 2 t. Lemon pepper

  • 1/2 cup nutritional yeast (for the “cheesy” flavor)

Directions:

  1. On a non-stick frying pan on medium heat, start cooking the chicken (you can add cooking spray or a little olive oil).

  2. As the chicken is cooking, turn the cauliflower head into “rice” by throwing the cauliflower florets in a food processor or using a cheese grater to grate them into “rice.”

  3. Add the “rice” to the pan along with all the other ingredients.

  4. Stir constantly & keep on medium heat until chicken is cooked through and vegetables are tender! Enjoy!

Yields: 2-4 servings.
