High Protein Lemon “Cheesy” Chicken Cauliflower Bowls (DF & GF)
This makes such an easy dump dinner & it’s so fresh & “zesty” from the lemon juice!
Ingredients:
1 lb ground chicken
1 cauliflower head
1 zucchini, thinly sliced
1 sweet onion, diced
1/2 T. Garlic salt
1/2 t. Himalayan salt
Juice from 2 lemons
2 t. Lemon pepper
1/2 cup nutritional yeast (for the “cheesy” flavor)
Directions:
On a non-stick frying pan on medium heat, start cooking the chicken (you can add cooking spray or a little olive oil).
As the chicken is cooking, turn the cauliflower head into “rice” by throwing the cauliflower florets in a food processor or using a cheese grater to grate them into “rice.”
Add the “rice” to the pan along with all the other ingredients.
Stir constantly & keep on medium heat until chicken is cooked through and vegetables are tender! Enjoy!
Yields: 2-4 servings.
