Meal Prepped Snacks & Salad “Buffets”
FRUIT SNACK BOWL:
-Hu Hunks
-Blackberries & Raspberries
-Blueberries
- Tillamook cheese
VEGGIE SNACK BOWL:
-Carrots
-Sugar Snap Peas
-Celery
-Hummus
For the salads, throw them in LARGE divided Tupperwares, so when you feel like a salad, pull them out and fill your plate buffet style.
MANDARIN ORANGE CRUNCH SALAD:
-spring mix
-mandarin oranges
-peanuts
-shredded carrots
-shredded cabbage
-Peanut dressing: blend together 3 T. unsalted peanut butter, 3 T. soy sauce, 1 T. freshly squeezed lime juice, 1 T. rice wine vinegar, 2 t. fresh ginger, minced, 1/4 t. sriracha, & some water for thinning (everything to taste).
POMEGRANATE PECAN SALAD
-spinach &/or spring mix
-pomegranate seeds
-sliced red onion
-candied pecans: on the stove on medium heat add pecans, a sprinkle of maple sugar, & a dash of maple syrup. Stir for 1-2 minutes to “candy” them.
-feta cheese
-avocado slice later
-apple slice later
-poppy seed dressing of choice
