Pesto Chicken Veggie Sandwich
This is not a traditional recipe where ingredients are measured out:
Spinach, sautéed
Mushrooms, sautéed
1/4 red onion, sliced & sautéed
2 slices of cheese of choice (DF cheese if DF)
Rotisserie chicken, shredded
Basil pesto
Lettuce
Sprouts
2 slices GF sprouted bread
Sauté the spinach, mushrooms, & red onions then set aside.
Put 2 slices of cheese next to each other on the frying pan on medium heat. Put a slice of bread on top of each slice of cheese. “Cook” until the cheese is hardened. This gives the sandwich a yummy “crunch” on the outside of the sandwich!
Add the basil pesto on top of each slice.
Add the sautéed mushroom, onion, spinach rotisserie chicken, lettuce, & sprouts to the sandwich! Enjoy!
