Pesto Chicken Veggie Sandwich

This is not a traditional recipe where ingredients are measured out:


  • Spinach, sautéed

  • Mushrooms, sautéed

  • 1/4 red onion, sliced & sautéed

  • 2 slices of cheese of choice (DF cheese if DF)

  • Rotisserie chicken, shredded

  • Basil pesto

  • Lettuce

  • Sprouts

  • 2 slices GF sprouted bread


  1. Sauté the spinach, mushrooms, & red onions then set aside.

  2. Put 2 slices of cheese next to each other on the frying pan on medium heat. Put a slice of bread on top of each slice of cheese. “Cook” until the cheese is hardened. This gives the sandwich a yummy “crunch” on the outside of the sandwich!

  3. Add the basil pesto on top of each slice.

  4. Add the sautéed mushroom, onion, spinach rotisserie chicken, lettuce, & sprouts to the sandwich! Enjoy!
