Rich Double Dark Chocolate Brownie Berry Cake (GF, DF, & Refined Sugar-Free)
Cake Ingredients:
8 ounces semisweet chocolate chips (you can buy sugar-free, dairy-free, & gluten-free online)
1/2 cup coconut oil
1/2 cup unsweetened applesauce
1 cup coconut sugar
4 eggs
1 Tablespoon pure vanilla extract
1/4 teaspoon Himalayan salt
1/4 cup all purpose gluten-free flour (I use Cup4Cup GF All Purpose-Flour!)
Chocolate Drizzle:
2/3 cup coconut sugar
1 teaspoon cornstarch or arrowroot starch
3 Tablespoons unsweetened almond milk
1 Tablespoon coconut oil
3 Tablespoons Cocoa powder
1 teaspoon vanilla
Toppings:
Blueberries
Strawberries, sliced
Cake Directions:
Preheat oven to 325°F. Spray a 8 or 9 inch springform pan with cooking spray. A normal cake pan will also be fine. Just be sure to cut out parchment paper the size of the pan & put it on the bottom of the cake pan, then spray it with cooking spray.
Put the chocolate chips in a medium/large microwave safe bowl with the coconut oil & applesauce. Stir every 30 seconds until chocolate is melted.
Let the chocolate cool down to room temperature. Once it is cooled off, add the coconut sugar, eggs, vanilla and salt. Mix with a handheld mixer.
Add flour and mix just until combined.
Pour batter in the cake pan and bake for 35 min. A toothpick will not come out clean! When you touch the center it should “bounce!”
Set the cake directly in the freezer for 2-3 hours to set up.
Chocolate Drizzle Directions:
Melt coconut oil & cocoa powder in the microwave for about 1 minute stirring every 15 seconds. Set chocolate mix aside.
Blend the coconut sugar and cornstarch into a powder in a blender (this will take place of powdered sugar).
Transfer the “coconut powder sugar” in a mixing bowl, and add the milk, butter, vanilla, & coconut/cocoa chocolate mix.
With a handheld mixer, mix ingredients together.
Once the cake is set up, carefully pop the cake out of the cake pan onto a cake stand.
Spread the chocolate drizzle on top of the cake with a spatula.
Add blueberries & strawberries on top and enjoy!
Note: If the chocolate drizzle is too bitter, add a little more coconut sugar & vanilla, or only add 2 tablespoons of cocoa powder next time!
