Clean Cinnamon Applesauce Muffins (GF & DF)

Dairy-Free and Gluten-Free Clean Applesauce muffins that aren't overly sweet


Muffin Ingredients

  • 2 cups gf oat flour (I grind gluten-free oats in a blender)

  • 2 tablespoons baking powder

  • 1 teaspoon baking soda

  • 1/2 cup raw honey

  • 1/2 cup unsweetened vanilla almond milk

  • 3/4 cup unsweetened applesauce

  • 1 banana, mashed

  • 1/4 cup coconut oil

  • 2 teaspoons cinnamon

  • 2 teaspoons vanilla

  • 1/4 teaspoon sea salt

Streusel

  • Coconut sugar

  • Cinnamon

Directions

  1. Set the oven to 350°

  2. Mix all the wet ingredients together then add dry ingredients. Instead of packing down the flour in the measuring cup, pour the flour into the measuring cup and shake the flour or the muffins will go too dry.

  3. When ingredients are all mixed together, scoop with a 1/4 cup into a greased muffin tin (filled 3/4 full). Makes 12 muffins.

  4. Sprinkle desired amount of coconut sugar and cinnamon on top of the muffins.

  5. Bake for 16 minutes or until toothpick insert comes out mostly clean.

  6. Enjoy with butter & a glass of milk or coconut oil and almond/coconut milk if you’re dairy free.
